Blueberry Upside-Down Cake

Ingredients:

1/4 cup unsalted butter
1/2 cup packed brown sugar
2 cups fresh blueberries
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
Instructions:

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.

In a small saucepan, melt 1/4 cup of unsalted butter over medium heat. Stir in the brown sugar until dissolved and mixture is smooth. Pour the melted butter and brown sugar mixture into the prepared cake pan, spreading it evenly across the bottom. Arrange the fresh blueberries in an even layer over the butter and sugar mixture.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.

Gradually add the flour mixture to the creamed butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.

Pour the batter evenly over the blueberries in the cake pan, spreading it gently with a spatula to cover the berries.

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully invert the cake onto a serving plate or platter.

Serve slices of the blueberry upside-down cake warm or at room temperature. Enjoy!
